Summer Wired Sugar Flowers for Beginners

Aimed at beginners, or those with little knowledge, this course will introduce you to different techniques using cutters, templates and the pulled method to create a variety of summer wired sugar flowers & foliage. These will include calla lily, rose, oriental lily, honeysuckle, orchid, ruscus, sweet peas, lily of the valley & freesias. Learn how to use veiners, different techniques to wire leaves & petals, and how to apply dust colours to create realistic looking flowers. Once leaves & flowers have been glazed or steamed, guidance will be given on how to tape together your individual flowers to create a spray perfect for any celebration cake.

Students will require own equipment and a 10” or 11” round sugarpaste cake or dummy cake.

Introduction to Basic Piping Skills - SPECIAL OFFER PRICE!

With so many ‘quick fix’ cake decorating moulds and cutters available today, learn how to add the finishing touches and enhance your creations with some traditional piping skills. A sugarpaste covered board will be provided for you to complete a selection of piping skills which will include shells, scrolls, line-work, lettering, cornelli, snail trail, pressure-piped hearts and stars. Guidance will be given on how to make and colour royal icing, and how to make greaseproof piping bags. 

Students may progress to Royal Icing for Beginners, 6 week course. You will need to bring your own piping nozzles and basic equipment.

Royal Icing for Beginners

This course is an introduction to the traditional skills and techniques required to decorate a cake to a professional standard with royal icing. Students will explore basic design principles, helping them to achieve a balanced layout to their cake. Guidance will be given on the preparation & storage of royal icing, how to colour it, and the different consistencies required for various piping techniques. Learn how to marzipan and flat ice a round cake to achieve a smooth finish. Decorative skills will include shells & scrolls with over-piping, simple run-out motif & lettering, stenciling, line-work, piped inscriptions, picot edging.

Students will require their own equipment and a 9” round fruit cake or dummy cake.

Run-Out Designs

Run-out work (also known as flood work) is an interesting aspect of royal icing, and can be the most rewarding. Made as ‘off pieces’, its versatility can lend itself to creating simple plaques, motifs and inscriptions, or elaborate crests, collars and ornamental pieces. This course is designed for beginners or those who wish to improve their royal icing skills. Learn the basic techniques of flooding, and the effects which this fantastic technique has to offer. Guidance will be given on how to mix and colour royal icing, and how to make greaseproof icing bags.

Students will require their own equipment.

Brush Embroidery

Brush embroidery is an exquisite technique that uses royal icing to achieve attractive and dramatic designs on cakes and cookies. First, it is piped onto the surface, and then using a damp paintbrush and gentle brushstrokes the icing is dragged inwards to add 2D texture. This course is suitable for beginners and those who want to improve their royal icing skills. Learn how to create floral designs from an embossed pattern, transfer and replicate designs inspired by wedding dress lace, use monochrome and multiple coloured icing and add texture to 3D flowers. A sugarpaste-covered board will be provided for you to complete a variety of designs. Guidance will also be given on how to mix and colour royal icing and how to make greaseproof piping bags.

Cake Decorating for Beginners  from Cupcakes to Christmas Cakes

Learn the professional way to create beautifully decorated cakes, from cupcakes to a Christmas cake. Skills will include how to cover with marzipan & sugarpaste, texturing, marbling, inlay work, using silicone moulds, stencils, crimping, embossing, frills & swags, basic piping, hand-moulded roses and simple unwired sugar Christmas flowers & foliage made from cutters. This course is informative, fun & rewarding.

Students will require cupcakes, 8”,9” or 10” round fruit cake, and own basic equipment.
